Chia Pudding & Coconut Cult Yogurt

Ingredients

For Bottom layer / Chia seed pudding: 

1 can of coconut milk; don't get the "light" version so you can maintain a thicker texture. 

1 tsp of vanilla extract

1 tbs of your favorite sweetener (we used raw agave)

1/3 cup of chia seeds

Pour the coconut milk into a small bowl. Add the chia seeds slowly as you whisk together with a fork. Add your vanilla extract and sweetener and mix well. Refrigerate the pudding mixture overnight or at least for a few hours. The coconut milk will absorb the chia seeds and turn into a pudding like texture! Chia seeds hold 10X their weight in liquid! They digest slowly, making them a powerful force for feeling full & satisfied which can lead to weight loss. This recipe will make more than what is needed so use the extra for breakfast cups for the rest of the week. Put extra in a leftover container and it will stay good in fridge for 5 days. 

For the Middle Blue Layer:

In a blender blend

1 frozen banana

1/4 cup of almond milk (or plant-based milk of your choice)

1/4 tsp of POPJOY Blue Spirulina 

For the Top Coconut Probiotic Yogurt Layer: 

We used Coconut Cult Probiotic yogurt It's loaded with healthy probiotics and it's Vegan too! You can find it here  Coconut Cult  - follow them on instagram they rock! @thecoconutcult

All you do is mix in 1 tsp of POPJOY Pink Pitaya with 1/2 cup of yogurt

Topping: 

We topped ours with Cacao Nibs and fresh strawberries and made some epic vegan chocolate sauce using melted coconut butter and some cacao powder and drizzled it down the side. We also layered in some frozen blueberries in the center too! There are no rules, just keep in fun and healthy!
