Peanut Butter Coconut Fudge!
Instructions & Ingredients:
For the bottom Blue layer:
- 1 cup Coconut Butter
- 1/3 cup of coconut oil
- 1 tsp of POPJOY Blue Spirulina
Whisk together over low heat in a saucepan until smooth texture, then pour bottom layer into a silicone mold, be sure to only fill 1/3 of the mold up, you can use any fun shape you want! Set in freezer for apox 8 min to set.
For the middle peanut butter layer:
- 1 cup of creamy organic peanut butter
- 1 tbs coconut oil
Stir peanut butter & coconut oil over low heat in a saucepan until creamy. Then pour another 1/3 of the mold up with the peanut butter mixture and set in freezer again for aprox 8 min. You may see the blue part melt into the peanut butter - that's okay! :)
For the top Pink layer:
- 1 cup Coconut Butter
- 1/3 cup of coconut oil
- 1 tbs of POPJOY Pink Pitaya
Same as first layer; Whisk together over low heat in a saucepan until smooth texture, then pour top layer over the peanut butter layer to fill the mold. Set in freezer for apox 8 min to set.
Once you can see the layers have frozen properly you can just pop these babies out of the silicone mold and eat! I like to let them sit out for about 5 min so the peanut butter layer gets a little softer. Either way though they are Delish!! Store in the freezer and you have a quick little healthy snack anytime!!
