Pitaya Pancakes (vegan + gluten-free)
Instructions & Ingredients:
For Pitaya Pancake part:
1 cup (gluten-free) oats
1 Tbs maple syrup
3 Tbs corn starch
1 Tbs baking powder
2 cups plant based milk
1/4 Tsp ground vanilla powder
2 tbs of our POPJOY Pink Pitaya Powder add until desired pink color is achieved.
Blend all ingredients until smooth. Let sit on the counter to thicken for arox. 5 minutes. Spray your pan with coconut oil. Use 1/4 cup batter at a time and cook on medium heat until bubbles pop up. Flip and cook on the other side until slightly golden edges. I layered coconut butter in between my pancakes
For the Blue Spirulina Coconut Butter Frosting Part:
1 cup of coconut butter
1/2-1 tsp of our POPJOY Blue Spirulina Powder
"melt" the coconut butter by placing a bowl of hot water under a bowl of your coconut butter, once it is melted and runs off of a spoon, stir in the blue spirulina powder, add until desired blue is achieved!
Pancake Toppings: Top with your favorite seasonal organic fruit, or superfoods like cacao nibs or coconut shreds... This is the fun part so get creative! Maybe top with some plant based whip cream & drizzle with maple syrup!
