I used a vanilla vegan & gluten free cake mix - (you can substitute eggs for soaked chia seeds and you can replace butter with a vegan butter option)
Mix 2 tbs of POPJOY Pitaya powder into your cake batter and pour into cupcake molds. Bake as instructed.
Divide your frosting into 2 bowls and in one bowl add 1 tbs of POPJOY Pitaya Powder and the other half mix in 1 tsp of POPJOY blue spirulina powder - mix well and add if needed until desired color is reached.
Fill a frosting bag and desired frosting tip with the frosting by alternating spoonfuls of each color. When you frost your cupcakes you will see blue, pink and purple when they mix together! (optional) sprinkles or edible glitter will make these even more fun!
