Raw Vegan Confetti Balls!
For Balls:
In a food processor combine to form a dough ball. Dough should stick together and be easy to roll.
2 cups of raw cashews
2 cups of unsweetened coconut shreds
1/4 cup of raw agave (or sweetener of your choice)
1/4 cup organic lemon juice
Divide dough into 4 equal balls of dough. By hand mix in to each ball to make a separate color. You may want to use gloves for this so you only get the balls colored and not your hands! :)
For Blue: 1/2 tsp of POPJOY Blue Spirulina
For Yellow 1 tsp of POPJOY Sunshine Latte
For Red 1 tsp of POPJOY Velvet Latte
For Pink 1 tbs of POPJOY Pink Pitaya
Now you'll have 4 colors of dough, roll aprox 1oz size balls in the palm of your hands, recipe should make aprox 4 balls in each color = 16 balls.
For Rainbow Sprinkles:
in 4 little bowls put 1/2 cup of coconut shreds in each bowl. take 1/4 tsp of each of the above powders and a aprox 1/2 tsp of water and mix by hand so that the powder absorbs the color and naturally dies the cocont shreds. Roll each ball into a different color - get creative with what colors you want to use! I even mixed all 4 colors of coconut shreds into a bowl and made a multi colored ball. There's no rules here - just be creative and have fun with it!
Keep these little gems in the fridge and they will last for 10 days - but I promise they will be gone by then!
