Vegan Galaxy Donuts
Ingredients:
For Donut Base:
2 cups gluten-free oats (we used Bob's Red Mill brand)
2 cups of unsweetened coconut shreds
1 tsp vanilla extract
1 tsp ground cinnamon
3 tbs peanut butter
1/2 cup agave or sweetener of your choice
10 pitted medjool dates
1/4 cup cacao powder
1/4 tsp sea salt
For Donut Galaxy Frosting:
1/2 jar of Coconut Butter (we use Artisana brand)
1 tsp of POPJOY Blue Spirulina Powder
Instructions:
To make the Donut Base:
Place all ingredients listed for donut base in a food processor and process till forms a dough. The dough should stick together and be easy to roll. Take aprox 3.5oz of dough and roll into a tube aprox the size of the donut mold in a donut pan. If you don't have a donut pan don't worry you can still make these donuts by just rolling into a tube and connecting the two ends to form a donut.
Place donuts in the freezer for aprox 30 min. In the meantime make your frosting!
To make the Galaxy Frosting:
Empty out 1/2 of a 16oz jar of coconut butter into a bowl. Put a little hot/warm water in a separate bowl and place the bowl of coconut butter inside of the hot water bowl to "melt" the coconut butter naturally. Once completely melted down to a consistency that will run easily off of your spoon then stir in 1 tsp of blue spirulina powder.
Once donuts have sat in the freezer for 30 min, take out and place on a cooling rack, we recommend placing a cookie tray below the cooling rack to "catch" the extra frosting that may run off - this way you can scrape the extra frosting back into the bowl to use again. (cuz wasting coconut butter should be illegal) or dip some strawberries into it! YUM! Dunk your donuts by hand into the frosting and then turn over and place onto your cooling rack - Since the donuts are cold the frosting should harden right away which helps avoid losing any frosting with run-off.
Optional Topping Ideas:
Get creative with decorating your galaxy donuts! Here are some ideas: You can take a little extra coconut butter and mix with our Pitaya powder for a pink color that you can drizzle on top of the blue. Vegan Edible glitter is fun to sprinkle on top. Also, natural ingredients like chia seeds, coconut flakes, and cacao nibs are great on top too! Make each one unique!
